i had to make my own pesto for this soup and i have to say i could have just smeared it on a whole loaf of bread and call it good. that probably wouldn't have been the most nutritious thing though. the soup recipe is one i found in gourmet magazine and doctored to my diet!.
1 1/2 cup basil washed and torn
1/2 cup olive oil
3 big garlic cloves or more
1 cup pine nuts
1/2 nutritional yeast
shake in salt and pepper
blend in food processor till smoothish
try not to eat it all in 5 minns
pesto pea soup ab style
1 small onion chopped
1 carrot peeled and chopped
1 leek whites and greens only
2 celery ribs chopped
2 cups store bought veggie broth
2 cups water
1 pound bag frozen peas
salt pepper oregano to taste
simmer broth , water, salt, pepper, onion, carrot, leek, and celery in a medium saucepan. with lid on for 6 minns . Add peas and cook with lid off till peas are bright green.
stir in pesto then puree! in a few small batchs. be careful when blending hot liquids for christ sake! season with sea salt!
i served this with a nice spinach salad topped with grilled tofu marinated in mustard and a shallot salad dressing.
